Recipes are for 1 person
For the noodles you'll need:
125gr wheat noodles (€0,25)
frozen peas (€0,05)
1/2 red bell pepper (€0,10)
50gr mushrooms (€0,25)
1tbsp soy sauce (€0,03)
2 garlic cloves (€0,08)
1tbsp olive oil (€0,05)
50g string beans (€0,11)
herbs:
pinch salt & pepper
1tsp paprika powder
1tsp ginger powder
1tsp cumin
(€0,04)
optional garnish: spring onion (€0,04)+ sesame seeds (€0,04)
Total price: €1,04
Start by cutting all your veggies. Put the oil in a pan and add the string beans and the bell pepper. Cook these for about 3 minutes on medium heat, stirring ocassionally. In the meantime cook the noodles according to the instructions on the package. Once the veggies are a bit cooked you can add the mushrooms to it and cook for 2 more minutes on low heat. Then add the garlic, the herbs and the frozen peas and cook this for 1 more minute on low heat. Then you can turn off the stove and add the cooked noodles to it and the soy sauce. Stir evrything around until all the noodles are covered in the soy sauce and the herbs and that's it! You could add some spring onion and sesame on top as garnish but this is optional. Enjoy!
For the fried rice you'll need:
100gr firm tofu (€0,20)
125 brown rice (€0,18)
1tbsp sweet chili sauce (€0,04)
1tbsp soy sauce (€0,03)
90gr chickpeas (€0,26)
1tbsp cornstarch (€0,02)
1tbsp soy sauce (€0,03)
2tbsp sunflower oil (€0,03)
50gr frozen green peas (€0,05)
herbs:
3tsp paprika
1/2tsp ginger powder
1tsp cumin
1/2tsp salt
1/2tsp pepper
optional garnish: spring onion (€0,04)+ sesame seeds (€0,04)
Total price €0,96
Start by cooking your rice, I used brown rice for this cause that is what I like but you can use any type of rice that you like. For the tofu cut it into pieces and press the water out of it. If you own a tofu press then just use that but I don't have one so I just pressed mine in between a towel with a cutting bord and heavy weight on top. I just used a heavy pan on top. Press this for about 30 minutes. Then you can transfer the tofu pieces to a bowl and we'll make the spice mix for it. Add the cornstarch and all the herbs (except 1tsp paprika powder) to a bowl and mix. Then add this to the tofu pieces and stir everything around to make sure all te pieces are coated in this. Add the oil to a pan and heat this up. Once the oil is hot, add the tofu pieces and fry them for a few minutes on each side until all the sides are crispy. Then remove the pieces from the pan and in the same pan we'll add the cooked rice. Since there is still some flavour left in the pan from the oil and rhe herbs don't wash the pan before adding the rice. Fry the rice for a few minutes on medium heat until it turns slightly crispy. Then you can add some chickpeas and frozen peas and heat that up. I lastly added some sweet chili sauce, soy sauce and the 1sp of paprika powder to this to give it some flavour. Then I added the tofu pieces in here for a minute or so to make sure they were still hot when served and that's it! Again you can garnish this with spring onion and sesame seeds but this is optional. Enjoy!
